Berry muffins with white chocolate.

– 2 teaspoons lemon juice
– 250 ml of milk
– 125.7 ml Vegetable oil
– 1 egg
– 260 g flour
– 3 teaspoons baking powder
– 1/4 teaspoon salt
– 150 g of sugar
– 200 g of white chocolate
– 400 g of berries (fresh or frozen)


In a bowl pour all the “wet” ingredients: lemon juice, butter, milk and eggs.

Thoroughly mix them.

Take the white chocolate and cut it into small pieces.

Put the second bowl of dry ingredients: flour, baking powder, salt, sugar, chocolate. Leave about a half cup of chocolate pieces for decoration. Mix the dry ingredients.

Add wet mixture to dry. Gently mix. Small clumps – it does not matter if overdone with mixing your cupcakes may be too rigid.

Add to the mix the berries. If you take the frozen fruit, do not thaw before adding them to the dough. Otherwise, it will turn red.

Gently mix the dough with berries.

Pour into molds paper and carefully fill it to the top of the dough, then bake in the cake forms the most wonderful dome. Garnish with slices of white chocolate on top. If there is no paper – grease the form of any vegetable oil.

Bake for 20-25 minutes at 180 degrees.

When the muffins turn golden brown and a toothpick, which you pierce the middle of cupcakes to be clean, you can get a baking sheet from the oven.
