Baked salmon with vegetable ratatouille.

2 tablespoons oil (in the original – from grape seeds)
1 onion, finely chopped
1 red bell pepper, chopped
1 large zucchini, chopped
1 cup tomato puree
1 teaspoon chopped fresh thyme
1 bay leaf (optional)
2 tablespoons basil or oregano
2-4 salmon fillets (about 225 g)
salt and pepper

Heat a large skillet over medium heat. Fry the onions, peppers, zucchini. Add a pinch of salt and cook for about 10 minutes.

Add the tomato puree before the vegetables begin to brown. Also lay out the thyme and bay leaf.

Reduce heat to low, cover. Simmer over low heat for 10-20 minutes until the vegetables are tender. At the end of the salt, pepper, add the herbs before serving.

In the meantime, enjoy a fish.

Heat the oven to 200 degrees. Wash and dry the fish fillets. Arrange on a baking sheet, the laid foil. Sprinkle fillets with salt and pepper.

Send in the oven for 10 minutes until medium rare. Remove from the oven, leave for 5 minutes to “rest.” At the end sprinkle salmon with lemon and olive oil.

Put on a plate portion prepared salmon fillet with ratatouille.
