Baked Chicken with pesto, tomato & mozzarella.

Ingredients
4 each boneless, skinless, chicken breasts

3 1/2 oz basil pesto*

4 each roma tomatoes, sliced

8 oz fresh mozzarella, sliced

dash salt

dash black pepper

dash parmesan cheese, shredded

dash italian seasoning

*If you don’t have access to a basil pesto, have recipes you can make from scratch.

Directions
1.Preheat oven to 400°F.

2.Lightly coat a baking dish with EVOO.

3.Place chicken breasts in dish
4 each boneless, skinless, chicken breasts


4.Spoon basil pesto on each chicken breast
3 1/2 oz basil pesto

5.Spread to coat top of breasts.

6.Place tomato slices on top and sprinkle with salt and pepper
4 each roma tomatoes, sliced
dash salt
dash black pepper

7.Place slices of mozzarella on top of tomatoes
8 oz fresh mozzarella, sliced

8.Sprinkle with Italian seasoning and parmesan cheese
dash parmesan cheese, shredded
dash italian seasoning

9.Bake for 40 minutes.
10.Remove from oven.


11.Plate and enjoy with salad or fresh bread.
