Aromatic chicken (Pollo profumato).

-Chicken 1
-garlic 2 cloves
-a small bunch of parsley
-1 carrot
-2 branches of rosemary
-1 celery branch
-tomatoes 500g
-0.5 cups of white wine
-olive oil 3 tablespoons
-salt to taste
-pepper to taste
-black olives 30 gr

Cooking process:

Wash and cut the chicken into pieces. In a deep skillet heat the olive oil, add the garlic and rosemary and fry the chicken on all sides.

Season with salt and pepper, add the white wine and boil for some 10 minutes on low heat. Grate the carrots, chop the parsley, celery and add to the chicken. Cover and simmer another 10 minutes. Then coarsely chop the tomatoes and olives stew for 3-5 minutes. Serve warm.
