Achiote paste

The main ingredient in achiote paste Mexican -Family annatto.
These reddish-brown seeds are woody and subtle earthy flavor.
Annatto seeds are known for their unique coloring properties and are able to give to dishes the red shades, varying in intensity depending on the time of preparation.
Whole seeds can be used alone, and then removed before serving as bay leaf.
Achiote paste is used to prepare marinades for meat and fish. or cardamom pods.

3 tablespoons Annatto seeds
1 tablespoon white pepper
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 tablespoon garlic mollotogo
¼ teaspoon cloves
½ tsp allspice
¼ teaspoon dried oregano
2 tablespoons salt
¼ tbsp nutmeg
45 ml white wine vinegar
60 ml of water

All the seeds in a coffee grinder to grind and shift into a bowl.
Mix with salt and nutmeg.
Add vinegar and water mix.
