Roasted vegetables with crispy anchovy crumbs

You will need
Serves 4 as a side dish:
1 slice of bread wholemeal
1 tbsp olive oil
1 head of broccoli
1 large carrot, peeled
1 red bell pepper, peeled and cut into strips
4 anchovy fillets
1 tbsp olive oil
How to cook
1. Chop in food processor bread, to get the crumbs.
2. Heat the oil in a frying pan or wok. Add breadcrumbs and fry, stirring, for 4-5 minutes. Remove from the frying pan and set aside on a paper kitchen towel.
3. Cut the broccoli into small florets and chop the leg. Cut the carrots into sticks. Sweet pepper cut into strips. Finely chop the anchovies.
4. Heat the oil in a frying pan and fry the vegetables for 4-5 minutes on high heat, stirring frequently. Add the anchovies and continue to cook 5 minutes until soft. Serve the vegetables immediately, sprinkled with crumbs.
