Prawns in marinade

INGREDIENTS:

For the marinade:
— 1/4 cup salt
— 2.5 tablespoons skhara
— 2.5 tablespoons chili
— 4 cups of water
— 900 g peeled shrimp
— 1/4 cup vegetable oil
— 10 cm of fresh ginger, peeled and finely chopped
— 4 large garlic cloves, peeled and finely chopped
— 4 teaspoons sugar

PREPARATION:

1.In a medium bowl, combine salt, sugar, chili pepper and water. Whisk whisk until completely dissolved sugar and salt.

2. Pour the liquid into shrimp and leave at room temperature for 20 minutes. Heat the oil in a large frying pan over medium heat.

3. Fry the ginger and garlic, stirring occasionally with a wooden spoon, for 1 minute. Add the sugar and continue to stir until the garlic is pale golden (1-2 minutes). Garlic should not be dark brown!

4. Drain the shrimp through a colander and immediately place them in the pan.

5. Increase heat to medium-high. Cook, stirring occasionally, until the pink color of shrimp (about 3-4 minutes).

6. Serve with rice.
