Potato bagels with sweet onion-1

Ingredients to the recipe:
◾ 1 medium potato with yellow skin (about 140 gr.)

◾ 1 large sweet onion, cut into small crumbs
◾ 1/4 cup extra virgin olive oil, plus a little more for greasing the bowl
◾ 2 tbsp. l. honey
◾ 4,5 cups flour, plus a little more for kneading
◾ Large salt
◾ 7 g active dry yeast
◾ 1 tbsp. l. unsalted butter
◾ 1 egg

1. Prepare the mashed potatoes: 2.5 liters. of water to a boil in a large saucepan. Put the potatoes and simmer until fully cooked 20-25 minutes.

Potatoes, remove, water pour. When the potato is cool, clean it from the skin and mash in a medium bowl, adding, if necessary, a little water in which it was cooked.

2. Prepare the dough: in a bowl of mashed potatoes stir in the olive oil and honey. In the mixer bowl, combine flour, 2.5 tsp. salt and yeast.

3. In a mixing bowl, add the potato mixture and 1 tbsp. abandoned water. Beat on medium speed for 10 minutes, until the mixture is stiff but pliable enough. Add a few tablespoons of water left, if necessary. (The rest of the water do not mix).

4. Knead the dough: Put the dough on a surface lightly floured. Stir 5 minutes hands. The dough must be uniform and return their shape after pressing.

5. Allow the test brew: a large bowl sprinkle with a little olive oil. Put the dough and brush with olive oil on all sides. Cover the bowl with a damp dish towel and leave in a warm place for 1.5 — 2 hours, twice as long as it does not increase in volume.

6. Prepare the onions: until the dough rises, in a large skillet over low heat, melt the butter, add the onion and cook for 20-30 minutes until it is soft and transparent but not golden. Salt 1/2 hours. L. salt and set aside.

7. Shape bagels: Put the dough on a work surface. Form the dough sausage, which is cut into 12 equal pieces.

8. From each piece of roll tight ball and place on a baking sheet covered with parchment paper, cover with a damp towel and let rise for 30 minutes.

9. In the center of each ball with your thumb make a hole. These rings stretch, until the hole is not about the size of 5 cm. Put back on the baking sheet, cover with a damp towel and let rise another 20 minutes. Preheat oven to 230 degrees.

10. Boil bagels: left after the potato cooking water, bring to a boil. Carefully lay out the bagels into the water, a few pieces at a time, and cook for 30 seconds. Turn the slotted spoon and cook for another 30 seconds.

11. Put the bagels on the grill and pat dry, then put them back on the baking sheet covered with parchment paper.

12. Bake bagels: pan put in the oven, bake for 10 minutes until the bagels start to become golden.

13. Egg whisk with 1 tbsp. l. water, bagels lubricate the resulting mixture.

14. Top with fried onions.

15. Bake the potato  bagels for 10-15 minutes until golden brown. Before serving, allow to cool for 15 minutes.
