mango chutney

Ingredients:
Article 2.5. diced mango
1 piece (2.5 cm.) Peeled fresh ginger
1 crushed allspice Scotch bonnet
1 crushed clove of garlic
4.1 h. L. coarse salt
1/2 cup apple cider vinegar
1/2 cup brown sugar
1/2 cup raisins
Ground black pepper

Preparation:
Put all ingredients in a medium sized saucepan. Bring to a boil, reduce heat to low and simmer until thickened, about 25 min., Stirring frequently so the sauce will not stick to the bottom. Let cool and store in an airtight container. Yield: 2.5 cup
