I offer you a curd cheesecake raspberry mousse. Very nice and not at all complicated homemade cakes, which is suitable for both home and tea for the holiday table.

Ingredients for curd cheesecake raspberry mousse

  • Butter — 150 g;
  • Eggs (2 pcs in the dough, 3 pieces in the filling) — 5 pcs;
  • Sugar (100 g dough, filling in 150 g, 120 g of a mousse) — 370 g;
  • Baking powder — 1 tsp .;
  • Wheat flour — 380 g;
  • Salt — 0.25 tsp .;
  • Corn Starch (2.5 tablespoons stuffing, 1.5 tablespoons of mousse) — 4 tbsp .;
  • Vanillin — 1 g;
  • Sour thick — 3-4 tbsp .;
  • Cottage home — 550 g;
  • Raspberry — 400 g;

Let’s start with the preparation of the sand baskets. The measure sugar bowl, add salt and soft butter.

The resulting dough is put into a plastic bag and placed in a refrigerator for 30 minutes.

For the stuffing mix to combine cheese, eggs, cream, sugar, vanillin and starch. Remove stuffing for a while in the fridge.

Prepare raspberry mousse: Mix the raspberries and rub through a sieve. The resulting juice is poured into a saucepan, add sugar.

Add starch and mix.

Massa put on fire and cook until it begins to thicken. Leave to cool, stirring occasionally.

The dough is removed from the refrigerator. The bottom of the form to lay parchment and shape of the dough basket with walls of 3-4 cm. The form I have 24 cm. Then put cottage cheese filling.

Carefully pour the top layer of raspberry mousse cheesecake.

Heat oven to 180 degrees and bake the cake 50-60 minutes.

The cake must be completely cool before you cut it into chunks. Better put into the refrigerator for 3-4 hours, ideally overnight. Delicious cake slice and serve.
